For the Chole (Chickpea Curry):

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 2 teaspoons ginger-garlic paste
  • 2 green chilies, slit lengthwise (adjust to taste)
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

For the Bhature (Fried Bread):

  • 2 cups all-purpose flour (maida)
  • 1/4 cup semolina (sooji/rava)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup plain yogurt
  • 1 tablespoon oil
  • 1 teaspoon sugar
  • Salt to taste
  • Oil for deep frying

Instructions:

Preparing the Chole (Chickpea Curry):

  1. Drain the soaked chickpeas and rinse them thoroughly.

  2. In a pressure cooker or a large pot, add the soaked chickpeas and enough water to cover them. Cook until the chickpeas are tender. If using a pressure cooker, cook for 5-6 whistles, or if using a pot, simmer for about 40-45 minutes.

  3. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.

  4. Add the chopped onions and sauté until they turn golden brown.

  5. Add ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.

  6. Add the tomato puree and cook until the oil separates from the masala.

  7. Reduce the heat to low and add cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a couple of minutes.

  8. Add the cooked chickpeas to the masala and simmer for about 10-15 minutes, allowing the flavors to blend together.

  9. Sprinkle garam masala and garnish with freshly chopped coriander leaves. Keep the chole warm until serving.

Preparing the Bhature (Fried Bread):

  1. In a mixing bowl, combine all-purpose flour, semolina, baking powder, baking soda, sugar, and salt. Mix well.

  2. Add yogurt and oil to the dry ingredients. Mix until the dough comes together.

  3. Knead the dough for a few minutes until it becomes smooth and elastic. Cover the dough and let it rest for at least 1 hour.

  4. Divide the dough into small portions and roll each portion into a round shape, approximately 4-5 inches in diameter.

  5. Heat oil in a deep frying pan or kadai over medium-high heat.

  6. Carefully slide the rolled bhature into the hot oil. Gently press the bhature with a slotted spoon to help them puff up.

  7. Fry until the bhature turn golden brown on both sides. Remove them from the oil and drain on a paper towel to remove excess oil.

Serving:

Serve the hot and flavorful Chole with the crispy and fluffy Bhature. Accompany it with sliced onions, lemon wedges, and pickles for an authentic touch. Chole Bhature is often enjoyed with a side of yogurt or mango pickle to balance the flavors.
