Ingredients:

  • 1 liter full-fat milk
  • ¼ cup basmati rice, rinsed and drained
  • 1 cup sugar
  • ½ teaspoon ground cardamom
  • ¼ teaspoon saffron strands (optional)
  • 1 tablespoon chopped nuts, for garnish (optional)

Instructions:

  1. In a heavy-bottomed pan, combine the milk and rice. Bring to a boil over medium heat, stirring constantly.
  2. Reduce the heat to low and simmer for 30-45 minutes, stirring occasionally, until the rice is cooked through and the milk is thickened.
  3. Stir in the sugar and cardamom. Continue to simmer for 5-10 minutes, or until the sugar is dissolved and the kheer is the desired consistency.
  4. If using saffron, soak the strands in a few tablespoons of warm milk for 10 minutes. Then, add the saffron-infused milk to the kheer and stir to combine.
  5. Serve hot or cold, garnished with nuts, if desired.
