Kheer Recipe: A Step-by-Step Guide
Kheer is a delicious and easy-to-make Indian dessert made with milk, rice, sugar, and spices. It is a popular dish throughout the Indian subcontinent and is often served as a dessert, snack, or even breakfast.
Here is a step-by-step guide on how to make kheer:
Ingredients:
- 1 liter full-fat milk
- ¼ cup basmati rice, rinsed and drained
- 1 cup sugar
- ½ teaspoon ground cardamom
- ¼ teaspoon saffron strands (optional)
- 1 tablespoon chopped nuts, for garnish (optional)
Instructions:
- In a heavy-bottomed pan, combine the milk and rice. Bring to a boil over medium heat, stirring constantly.
- Reduce the heat to low and simmer for 30-45 minutes, stirring occasionally, until the rice is cooked through and the milk is thickened.
- Stir in the sugar and cardamom. Continue to simmer for 5-10 minutes, or until the sugar is dissolved and the kheer is the desired consistency.
- If using saffron, soak the strands in a few tablespoons of warm milk for 10 minutes. Then, add the saffron-infused milk to the kheer and stir to combine.
- Serve hot or cold, garnished with nuts, if desired.
Tips:
- For a richer flavor, use whole milk instead of skim milk.
- If you want a smoother kheer, you can strain it after it is cooked.
- You can add other ingredients to kheer, such as raisins, chopped fruits, or nuts.
- Kheer can be made ahead of time and stored in the refrigerator for up to 3 days.
Enjoy!
