Shahi paneer is a popular Indian dish made with paneer (Indian cottage cheese), a creamy tomato-onion gravy, and cashews. It is a rich and flavorful dish that is perfect for a special occasion.
Ingredients:
- 1 pound paneer, cut into cubes
- 1 tablespoon ghee or oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch piece of ginger, minced
- 1 teaspoon cumin seeds
- 1/2 teaspoon coriander seeds
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1/4 teaspoon garam masala
- 1/4 cup cashews, soaked in hot water for 30 minutes
- 1 cup tomato puree
- 1/2 cup heavy cream
- Salt to taste
- Cilantro leaves, for garnish
Instructions:
- Heat the ghee or oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the garlic, ginger, cumin seeds, and coriander seeds. Cook for 1 minute more.
- Add the turmeric powder, red chili powder, and garam masala. Cook for 30 seconds, stirring constantly.
- Drain the cashews and add them to the skillet along with the tomato puree. Bring to a simmer and cook for 10 minutes, or until the gravy has thickened.
- Add the heavy cream and salt to taste. Stir to combine.
- Add the paneer cubes and cook for 5 minutes, or until heated through.
- Garnish with cilantro leaves and serve hot.
Tips:
- For a richer flavor, you can fry the paneer cubes in ghee before adding them to the gravy.
- If you don't have cashews, you can use almonds or walnuts instead.
- You can adjust the amount of spice to your liking. If you prefer a milder dish, you can reduce the amount of red chili powder.
- Serve shahi paneer with basmati rice or naan.
