Shahi paneer is a popular Indian dish made with paneer (Indian cottage cheese), a creamy tomato-onion gravy, and cashews. It is a rich and flavorful dish that is perfect for a special occasion.

Ingredients:

  • 1 pound paneer, cut into cubes
  • 1 tablespoon ghee or oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, minced
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon coriander seeds
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon garam masala
  • 1/4 cup cashews, soaked in hot water for 30 minutes
  • 1 cup tomato puree
  • 1/2 cup heavy cream
  • Salt to taste
  • Cilantro leaves, for garnish

Instructions:

  1. Heat the ghee or oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic, ginger, cumin seeds, and coriander seeds. Cook for 1 minute more.
  3. Add the turmeric powder, red chili powder, and garam masala. Cook for 30 seconds, stirring constantly.
  4. Drain the cashews and add them to the skillet along with the tomato puree. Bring to a simmer and cook for 10 minutes, or until the gravy has thickened.
  5. Add the heavy cream and salt to taste. Stir to combine.
  6. Add the paneer cubes and cook for 5 minutes, or until heated through.
  7. Garnish with cilantro leaves and serve hot.

Tips:

  • For a richer flavor, you can fry the paneer cubes in ghee before adding them to the gravy.
  • If you don't have cashews, you can use almonds or walnuts instead.
  • You can adjust the amount of spice to your liking. If you prefer a milder dish, you can reduce the amount of red chili powder.
  • Serve shahi paneer with basmati rice or naan.
